Gracefully Momming “Not a Sunday, but a Monday” Roast
Who says roasts are just for Sundays? This dish is proof that Mondays deserve magic too. Packed with vibrant veggies, aromatic rosemary, and a tender pork roast that practically falls apart, this is a one-dish wonder that turns an ordinary Monday into a soulful celebration.
Perfect for slow cooking while the day unfolds, this roast will have your home smelling like love, comfort, and “Mom’s got this.”
✨ Ingredients

1.5–2 kg pork roast, bone-in or boneless, scored and rubbed with your favorite spice mix

3 sprigs fresh rosemary

2–3 large carrots, peeled and sliced

2–3 potatoes, peeled and chopped

1 cup baby corn

1 cup broccoli florets

1–2 baby marrows (zucchini), chopped

Olive oil

Salt & pepper to taste

Optional: a splash of apple juice or veggie broth for moisture
🔥 Instructions
1. Preheat & Prepare
Set your oven to 180°C (350°F). Rub the pork roast generously with your spice blend (think paprika, garlic, thyme, mustard powder… whatever makes your heart sing).
2. Layer Your Veggies
Place all your chopped veggies in a large oven dish — starting with firmer ones like carrots and potatoes at the bottom. Drizzle with olive oil and season with salt, pepper, and a few sprigs of rosemary.
3. Nestle the Roast
Lay the pork roast on top of the veggies, skin side up if it has crackling. Pour a little apple juice or broth into the dish (about ½ cup) to keep things moist.
4. Cover & Roast
Cover with a lid or foil and roast for 30–35 minutes per 500g of meat. For a 1.5kg roast, that’s about 1 hour 45 minutes.
5. Uncover & Crisp Up
Remove the lid for the last 20–25 minutes, turn the heat up to 200°C (390°F) to crisp up the top — hello, golden crust!
6. Rest & Serve
Let the roast rest for 10 minutes before slicing. Serve with the tender veggies and those incredible roasting juices spooned on top.
